Our Founders
Simon and Phil Thompson worked tirelessly to evolve the Dornoch Castle Hotel Whisky Bar into one of the best Whisky Bars in the world. After many years of growing the reputation of the Whisky Bar they decided it was time that they started making their own whisky here in Dornoch. With a strong support for various visitors to the Whisky Bar they ran an extremely successful crowdfunding campaign and began whisky production in 2017.
Dornoch Distillery
Dornoch Distillery, built inside a Fire Station, dating back to the 1880s, we produce around 12,000 annual litres of single malt Highland whisky as well as our award-winning organic gin.
We take our time and focus on the old style of whisky production that Phil and Simon fell in love with whilst spending their younger years at the Dornoch Castle Whisky Bar.
Thompson Bros Independent Bottlers
During our first few years of production, whilst waiting for our whisky to mature, we released our first indy release, since then we have done more than 500 individual releases! These have ranged from well-aged single malt Scotch whisky to 3 year old Israeli single malt to rums from all over the Caribbean to a lovely mix of our own liquid and that of our fellow new wave distilleries.
Core Blends
We have 2 core blends, which sit alongside our Mediterranean gin. These are always available from our shop for customers and trade partners alike!
The SRV5 is a blended malt which has lovely floral notes mixed with a lingering of smoke. Whereas TB/BSW has a more solid sweetness, a typical gentle sherry bomb!
Home to the Dornoch Distillery is the Dornoch Castle Hotel with the World Famous Dornoch Castle Whisky Bar where you can try and wide selection of Thompson Bros products along with the many unique and rare whiskies from all over the world.
